Kathal ka Achar Banane Ki vidhi)

Cut jackfruit into 1 inch or so piece of your choice and wash it well
in running water and keep it in a vessel. Now put the pieces of
jackfruit in a large pan with double the amount of water and add
1/4 cup salt to it. Boil it well. When it boils, take out the amount of
water from it and spread the jackfruit to dry and place it on a
vessel.
When it gets dry and cools down then add 1 cup salt, mustard,
red chili powder, kalonji and hing, and mix it very well. Now put it
in a big jar or any other utensil in which you want to keep the
pickle and close it airtight. Cover it like this and keep it for 4 days
to marinate. Mix it well once a day, or if you need it, open it and
mix it well with a clean dry spoon.

Now leave it like this for 3 to 4 days. Take our wonderful jackfruit
pickle which can be served with any recipe, especially with
breakfast.
