Karela ka Achar Banane Ki vidhi)
First wash and dry all the Karellos thoroughly. Now cut them into
thin pieces. Now mix one teaspoon of salt in it and keep it for 15
minutes, which removes its bitterness completely. After 15
minutes wash all the pieces thoroughly with water and dry it. If
you dry it in the sun, then it will be better.
First put a pan on the gas, then fry it by adding fennel, fenugreek,
cumin and celery. When it cools down a little, put it in the grinder
and also add yellow mustard to it and grind it.

Place a pan on the gas and heat mustard oil in it. Now add
turmeric powder and asafoetida and mix it. Now add the bitter
gourd pieces and mix it well. Now add salt, red chili, black salt
and the prepared spices and mix well. Now allow it to cool
completely and keep it in the sun for two to three days.
The bitter gourd pickle is ready.
