 Salt - 4 cups (200 grams)
 Fennel - more than ½ cup (60 grams)
 Fenugreek seeds - 5 tbsp (60 grams)
 Yellow Mustard - ½ cup (30 grams)
 Turmeric Powder - 6 tbsp (45 grams)
 Chilli Flake - 4 tbsp (20 gms)
 Red chili powder - 4 tbsp (20 gms)
 Black pepper - 1.5 tbsp (10 gms)
 Asafoetida - a little more than 1 tsp (5 grams)
 Mango - 200 grams
 Bitter gourd - 250 grams

 Asafoetida - a little more than 1 tsp (5 grams)
 Mango - 200 grams
 Bitter gourd - 250 grams

Put the pan on the gas to make the masala. Put fennel, fenugreek
seeds, yellow mustard, black pepper in the pan and fry it for 3-4
minutes on medium flame while stirring continuously.
After 3 minutes the masala is ready, turn off the gas and take out
the spices in a plate.
When the spices cool down, put them in a mixer jar and grind
them coarsely. Take out the ground spices. Add salt, turmeric,
chilli flake, red chilli powder, asafoetida powder and mix
everything well.
Pickle masala is ready, fill it in any air tight container. Spices can
be used for 6-7 months. Pickle seasoning is prepared.
